Pide : Cuisine of Turkey has various dishes which are mainly made of meat and vegetables.

Introduction of Pide

Pide is one of the most delicious foods in Turkey which has an oval shape made from wheat flour.

It looks like Italian pizza but it has thinner bread than that in pizza. This food, as traditional meal in Turkey, can be baked at home or bakery.

You can also buy it at Pide stalls where you can have various types of it. The dough can be plain or with some sesame or nigella.

The invention of Pide goes back to 1480 when Sultan Mehmet could take the control of Sicily.

At that moment, an Italian chef saw the Turkish Army eat this food and enjoy it. When he went back to Italy, he started a food similar to Pide, called pizza, but he added mushrooms and peppers to his recipe.

Ingredients

The following ingredients are mentioned for different types of Pide for two servings:

• To make dough

o 450 gr all-purpose flour

o 7 gr dried yeast

o Half teaspoon sugar

o 175 ml water with temperature of 43.3 degrees centigrade

o 1 teaspoon salt

o 2 tablespoons Greek yogurt

o 2 tablespoons olive oil

• To make seed topping

o 1 teaspoon sesame or nigella seeds (or a mixture of them)

• To make egg wash

o 1 egg

o 1 tablespoon olive oil to brush the Pide

• To make spinach cheese topping

o 1 tablespoon olive oil

o 1 chopped onion

o 200 gr baby spinach leaves

o half zest of half a lemon

o half teaspoon ground cumin

o half teaspoon black pepper

o 113 gr white grated cheddar

o 75 gr feta

o 1 tablespoon olive oil

o Half cup chopped parsley

o Sea salt to taste

• To make lamb vegetable topping

o 1 medium chopped onion

o 3 minced cloves garlic

o 400 gr minced lamb

o half diced green bell pepper

o 2 medium peeled and diced tomatoes

o 1 tablespoon lemon juice

o 1 tablespoon olive oil

o 1 teaspoon salt and black pepper

o 2 teaspoons ground cumin

o 1 bunch chopped parsley (half for meat mixture and half for serving)

Recipe of pide

In order to make Pide with different ingredients and toppings, the following instructions are necessary depending on each type:

• Steps to make dough

o Mix half of flour, yeast, sugar and water

o Cover the bowl with plastic in a warm place for 2 hours

o Mix other half of flour, salt, olive oil and yogurt in mixer for 3-4 minutes

o Cover the bowl with plastic in a warm place for 2 hours

o Make balls with dough halves

• Steps to make plain dough with seeds

o Add sesame or nigella to the dough

o Fry olive oil, onion and pepper for 2-3 minutes

o Add tomatoes and stir for 2 minutes

o Turn off the heat

o Mix meat and the ingredients

o Fry olive oil and onion for 3-4 minutes

o Add spinach and stir for 2-3 minutes

o Add cumin, pepper, feta, salt

o Turn the heat off

o Mix parsley and cheese in another bowl

• Steps to make pepper cheese dough

o Fry olive oil, onion and pepper for 3-4 minutes

o Add garlic and stir for 2 minutes

o Add cheddar, feta, pepper and salt

o Keep the oven warm to 200 degrees centigrade

o Beat one egg and olive oil for dough

o Shape the dough halves similar to a boat with a 1 centimeters thickness

Depending on each type of Pide which you want to make, you can do the following steps:

• For plain Pide with Seeds

o Put egg wash on the dough

o Add sesame and nigella

o Put it in the oven for 10-15 minutes

• For lamb vegetable Pide

o Put the ingredients in the middle of the dough

o Cover the ingredients with the other sides of the dough

o Put egg wash on the dough

o Make some holes on the dough to release stem

o Put it in the oven for 20-25 minutes

• For spinach cheese Pide

o Put the ingredients in the middle of the dough

o Fold the sides of dough over the ingredients (no need to cover the filling)

o Put egg wash on the dough

o Put it in the oven for 10-15 minutes

• For pepper cheese Pide

o Put the ingredients in the middle of the dough

o Fold the sides of dough over the ingredients (no need to cover the filling)

o Put egg wash on the dough

o Put it in the oven for 10-15 minutes
